St. Patty’s Day Cookery

I love using slow cookers for meals. The meat comes out falling off the bone tender and the vegetables are steamed fresh. As I type, there is a St. Patrick’s Day themed meal prepared and being slow cooked into perfection (Corn beef, Cabbage, Carrots, Onion & Potato).

The only down side is that the lid is clear and the smell is wafting into the living room. So not only am I forced to inhale the deliciousness but every time I head into the kitchen for a bottle of water, my eyes peek inside to observe the cooking process. It won’t be done for another three hours…this is going to be difficult.

    That sounds yummy. I tried used a crock pot once and it came out horribly. How do you avoid the meat drying out?

      I keep an eye out on it and add water if need be. It depends what you are trying to cook too. Do you remember what you made?

        I think it was supposed to be chicken and potatoes. It became jerky and potatoes.

        Yeah, I keep an eye on the water level, it’s crucial. The handbook that came with the crockpot advises to keep minimal level of 1/2 full of water and maximum of 3/4 full.

        That’s probably where we went wrong. We told that we could start it cooking and leave it alone.

        Do you still have the crockpot? You can use it on so many things, pot roasts, ribs, pork, etc. You do have to check the time though, you don’t want to over cook it or under cook it.

        We got rid of it when we moved from Florida to NY. Ditched everything that we thought was ‘unessential’.

        😦 We had to buy a new crockpot because the one we brought with us from Oregon to CT did a disappearing act somewhere along the way. I swear it is a fabulous investment for a heart healthy meal w/o the stress of cooking. Especially for someone like me.

        I like cooking when I can, so I didn’t see it as much of a loss. 🙂
